Soft Shelled Crabs

    Had my first of the season tonight. Way good. Like eating giant spiders. So fresh one of them was still kicking when I cut off his face. If you have never had the pleasure, you don't know what you are missing.

    Looking forward to a bushel of the blue goodness later this summer.

    BTW it was about 95 here in the mid Atlantic today.

    But the discounted Grouper fillet was about 2 days too old.

    No, they are generally fried, but have to be cleaned before cooking.

    I got them wrapped in plastic, and when I grabbed the second one it was still moving. :eek:

    Soft Shelled sandwiches are the bomb.

    I dislike eating carcasses. I love my crabs as much as any other good old Maryland boy but I like the crabmeat, not the bodies.

    You go cook those tails to you are content but if you over cook them they suck.

    And for the soft shelled crap sandwhich I say a good potato roll and then the crab and maybe some mustard and tomato and that is all oh yea old bay.

    The potato roll is a given. I'm a lettuce, tomato, mayo guy. Old bay for me on the steamed crabs though, enough to really warm up the lips when eating.

    best thing to do with soft shell crab is lightly pan sear them with some sort of encrusting... i usually like mustard encrusted.. the mustard makes a nice contrast to the sweetness of the crab.

    softshell crab is awesome. gotta be my second favorite crab besides breadcrab. and I love breadcrab.

    but seriously, I'm gonna scoop me up some softshells and a 12 pack of blue moon when I get out of work.

    That's not to say you couldn't dip it in some radioactive sludge to make it spicier.

    10% bread, 10% overgrown space pubic lice, 80% win.

    just got my sampler pack of Blue Moon and a whole bushel full of softshells. The rest of today is looking sweet, though i'm now sorta disturbed that i'm relying on this forum to make culinary decisions for me.

    thank you man, i was waiting for someone to pick up on that.

    ill give you some good recipes, i might know a few :) soft shell crab used to be my specialty in the summer, well that and skate..Skate is amazing i used to make a Skate Au gratin that was amazing...
    another thing i like to do with soft shell crab is Crab almondine. Take the crabs grind up some almonds and make like some sort of adhesive for the almonds.. then make an almondine sauce, this can be done many ways but since its summer and your cooking with beer do this.....


    hot Pan..(key to good cooking)
    throw in butter, brown it, then add garlic maybe a little shallots and the almonds.... brown everything... once browned deglaze with white wine preferrably, but you could try to deglaze with blue moon that would be an interesting flavor... once deglazed add a little bit of heavy cream reduce until thick and then add a tiny bit of lemon juice..... the result should be pretty divine and should give you a great flavor with the beer.

    sounds bitchin (I love trout almandine) but I just eat my softshells in sandwich form with a dab of tartar sauce and, maybe, some tomato confit (if i'm up for a culinary adventure).
